We still don't know all of Yama-jii's special abilities yet etither. Remember he started the academy like 2000 years ago and was already strong then. I'm sure he still has some techniques we don't know any thing about. But, yeah, like jkobersky said, Kubo already stated in an interview that Kenpachi would never get bankai because he would just be too bad@$$. Although, Kubo does like to mess with our heads, so who knows? He coulda been holding something back at the time.

Like Ichigo, Zaraki's ZP is always in a state of Shikai due to his vast reiatsu. He can't use any abilities because he doesn't know his ZP's name. If you are asking will he learn his ZP's name, DD, I don't know anything for certain. However, it has been suggested in the story that Zaraki would like to learn the name of his Zanpkuto, so it's quite possible. He's already a beast, can you imagine if he learns Shikai special abilities. It'd be awesome. It'd be crazy if something like that happened in the middle of the Yammy fight.
